Jeroen, you can try cmake, there is a way to disable SBC support (try ccmake).

But I want to ask you for motivation, why do you want to disable SBC codec,
while it is optional (not required)? If you have SBC codec in system you should
compile support for it, otherwise you have lack of some functionality in
Wireshark.

Personally, ok for your need, but agree with Anders, SBC should be enabled by
defaults, so "--without-sbc/--disable-sbc" is only right way.
