That's because the crash occurs in the code to build the protocol tree, and that's done only if the main Ethereal/Tethereal code asked for a protocol tree to be constructed. That'll happen if you click on a packet in Ethereal, but it won't necessarily happen when you read in a file (it'll happen if you're using a read filter, or if you're coloring the display, but it probably won't happen if you're doing neither of them). It'll happen if you run Tethereal with the -V flag, and perhaps if you're running a tap, but if you're not using the -V flag, it won't necessarily happen unless you're using a read filter.
