This is probably a WinPcap problem - WinPcap includes a kernel-mode
driver, which is required in order to capture traffic, and which can cause
what those of us from UN*Xland call a "panic" and what Microsoft calls a
"blue screen", but Ethereal itself has no kernel-mode code, so it can't
directly cause a blue screen, and changing the version of Ethereal
probably won't make any difference.
You should report this to the WinPcap developers:

If you're using WinPcap 3.0, try un-installing it and trying WinPcap 3.1
beta instead. If you're running a version of WinPcap 3.1 beta older than
the current version (beta 4, as of when I'm typing this), try
un-installing it and installing the current version. If you're running
the current WinPcap 3.1 beta, report it to the WinPcap developers, so that
they have some chance of fixing it before the final 3.1 release.
