VERY DUMB QUESTION, but is there not anywhere on the
net where I can simply download Ethereal for OS X and
run it?

is an alternative to Fink, and has Ethereal 0.10.8. It might work better. (I've tried neither - I build Ethereal directly from Subversion, but then I'm a developer....)
