That's not a list of display plugins, it's a list of dissectors, most of
which aren't plugins.

Currently, you can't, except by rebuilding Ethereal with fewer
dissectors (and you'd have to do the work of figuring out how to do that
yourself - we haven't put any effort into that).

We might be able to arrange that disabled protocols not show up in that
list.  The list of disabled protocols can be saved, so that every time
you ran Ethereal those protocols wouldn't be dissected, and with that
change they also wouldn't show up in that list.
