Probably the easiest way to do this is to use the RedHat supplied packages, which you can get from https://rhn.redhat.com/ (see also http://rhn.redhat.com/errata/RHSA-2004-136.html)
You will basically see a package called ethereal and one called ethereal-gnome. I would suggest grabbing both. Ethereal will give you the core code but no GUI (you do get tethereal the text version). Ethereal-gnome gives you the actual ethereal binary which can be run under X. You do not need the src rpms; as a "newbie" go for the precompiled 'it should work out of the box' rpms.
IIRC you will need to do a find for ethereal and tethereal if you use the sourceforge/ethereal supplied binaries and create symbolic links to the binaries so they show up in a directory which is in your path... I am a bit rusty so someone else may be able to detail this more.
Interestingly enough the ethereal site has older binaries than RedHat... As you know the http://www.ethereal.com/distribution/rpms/ directory gives you this:

You will to pick one of these, I typically use ethereal-base-net-snmp if I use any of these; the difference is which SNMP engine is used (or not at all).

Normally you can skip this unless you are trying to debug.

It is probably worth getting this one too if you are using RedHat + gnome as this will give you the GUI.

I am afraid I have no idea about this one.

I'm running RH Enterprise WS and am trying to install Ethereal 0.10. I understand how to use the RPM manager - but am tearing what hair I have left trying to get the install.
First - I'm not sure what the difference is between all of the listed packages on http://www.ethereal.com/distribution/rpms/
I understand I need to start with the base package - but how does one discover the diffreence between ethereal-base-net-snmp-0.10.0a-1.RH9.i386.rpm and ethereal-base-no-snmp-0.10.0a-1.RH9.i386.rpm? These packages look the same to me and I've not got a clue what the difference is - or how to discover what the difference is.
Second, when I try to install ethereal-base-0.10.0a-1.RH9.i386.rpm I get an error that says udc-snmp is needed. I'm not sure how to find this package - or how to get the correct version.
Any direction towards a how-to would be most appreciated
