Ethereal 0.9.15 supports several different protocols used for VoIP, e.g.:
-H.323 (H.225 + H.245) 
-Session Initiation Protocol (SIP)
-Megaco/H.248
-MGCP
-Skinny  (Cisco proprietary)
-RTP/RTCP

There are some protocols used for VoIP that Ethereal doesn't handle (probably mainly proprietary protocols).
