No, the way you found is the only way to do it.

No.  The only types of plugins Ethereal currently supports are plugin
dissectors for protocols.  There is no mechanism for adding any other
type of plugin, and something to colorize a TCP stream would not be a
dissector, it'd be another type of plugin.
