Well, some of the graphing you might want can be done by Etherape:

	http://etherape.sourceforge.net/

which can either read tcpdump-format captures (Ethereal captures are in
tcpdump format) or capture traffic itself; it draws a graph of hosts,
with lines between them representing traffic.
