Go ahead.
Ethereal already supports several protocols that are either  not documented,
obsolete/historical,
or not published.
The ethereal developers might not be able to verify or fix bugs in the
dissector though.
For some protocols, ethereal is the only available reference/documentation
today.

Keep in mind that the ethereal source code for a good protocol dissector is
almost as good as a formal protocol specification, which is bad if your
company wants to keep the protocol secret.
