Try looking at "Edit->Protocols" or "Edit->Preferences".  You should find 
both MGCP and Gryphon listed under "Edit->Protocols" and some preferences 
to be set under "Edit->Preferences" for MGCP.  This is the indication that 
these plugins have been loaded.

The confusion is that the "Tools->Protocols" menu is for enabling and 
disabling old style plugins.  Since ethereal no longer ships with any 
old style plugins you don't see anything listed there.  New style 
plugins behave very much like any other dissector, and are thus enabled 
and disabled at the "Edit->Protocols" dialog.
