Actually, that's the default now. I guess it has the advantage that it tries to compile the AirPcap code on more compilers than just Microsoft Visual C++, to get more checks done by compilers, even if the code is actually dead code on all OSes other than Windows.
In the trunk and 1.8 branch, that button is not in the "Capture Options" dialog, it's in the interface options dialog popped up if you double-click an interface in that dialog. I've fixed the trunk not to add that button if the interface isn't an AirPcap interface; I'll schedule that to be backported to 1.8.
