Is there any thing else I should look at in wireshark to give me an indicator as
to what is going on?
I'm not that familiar with the VOIP protocols, but I know there are a few
VOIP-related bugs filed in bugzilla (https://bugs.wireshark.org/bugzilla/), at
least one concerning problems when there are multiple calls contained within a
single capture file, so it's possible that the analysis you're looking at is not
quite right. You might try isolating each call and saving the related packets
to 2 different capture files to see if the analysis is any different. Other
than that, maybe some of the VOIP experts here have some additional tips for
