Though this response is very delayed, I wanted to say that turning on
the 'Try to decode RTP outside of conversation' option worked great.
Sometimes there are a couple of packets that it doesn't recognize the
payload, but for the most part it works well for me.
I tried researching what that options does, looking for documentation
for it, and couldn't find any anywhere. How did you know what it does
("Note that it looks for a version number of 2 in the first octet, and a
known payload type in the second octet, rather than a dynamic payload
type.")

I have a Toshiba phone system and I must manually tell it to decode the
UDP as RTP. I haven't dried the 'Try to decode RTP outside of
conversation' option.

...or you toggle the RTP preference "Try to decode RTP outside of
conversation" to true.
