I find the underscore "_" easier to read but there is a convention in networking to use a dash "-".
'   1. A "name" (Net, Host, Gateway, or Domain name) is a text string up
to 24 characters drawn from the alphabet (A-Z), digits (0-9), minus
   sign (-), and period (.).'

It doesn't affect filters since hostname fields are strings but it does affect what people might type out of habit.

At the very least, I think something should be changed with nas-eps and nas-5gs, because all the fields in those two dissectors use underscores for filters ("nas_eps") but the protocols themselves use hyphens. ("nas-eps"). Mildly breaking change, but if 4.0 is the next release it's the time to do it.

Have a look at this MR for some earlier discussions: https://gitlab.com/wireshark/wireshark/-/merge_requests/445
