Switching from ASCII to Raw does the trick.  Apparently this isn't an issue in
the older and Legacy versions since they default to Raw but in the new version
it defaults to ASCII.  I also noticed that when Raw is selected, the new
version will display the data in all Hex but with the older versions, Raw still
displayed the data in ASCII format.

However, since that option is entitled, "Show data as", I have assumed that it
is only for formatting the way the data is displayed but apparently, it also
affects the way the data is saved to a file.  If that is the case, the option
label is a little misleading.
