Isn't this already available with the Advanced graphing feature?  Try the
following to see if it meets your needs:

Statistics -> IO Graph -> 

    Y Axis:
        Unit: Advanced

    X Axis:
        Tick interval: <set as desired from 10 min down to 0.001 sec>

    Graphs:
        Filter: <set as needed, e.g., udp>
        Calc: <SUM(*)|MAX(*)|AVG(*)|...> <filter, e.g., udp.length>
