It seems that the only definitive list of column format strings, which are
usable to tshark as command-line arguments, is the source code for column.c.
These values and their descriptions should be documented in a way that
minimizes the possibility of loss of synchronization between code and
documentation.
It seems that the best way to accomplish that might be by adding a "-G
column-formats" option to tshark and then fixing the documentation to document
this new glossary option.
