I've fixed the above issue in SVN #46885.
Basically: if any of several prefs pages was too large to fit within the
vertical screen space available, then the bottom buttons (Ok/Apply/Cancel)
disappeared off the bottom of the window (for *all* of the prefs pages).
I'm guessing that this was the cause of your original problem.
That is, I'm guessing that you did a "quit and restart wireshark" after
doing a "specifiy port 5000 as unitstim port in preferences" without doing an
Ok or Apply in the preferences window (since the buttons weren't visible).
The fix: add scrollbars to those prefs pages without same.
(The scrollbars only appear when needed).
[I'm marking this bug as fixed; I'm also changing the bug title slightly to
reflect my analysis. If my analysis as to the missing buttons at the bottom of
the prefs window being the real issue is incorrect, please feel free to re-open
this bug].
