Wireshark uses the GTK library to implement the GUI. Currently that library
only works on MacOS inside of X11 although there is a project to make GTK
applications run natively on MacOS like they do on Windows.

I don't see how Wireshark can affect the cut-n-paste behavior. I believe (but
it's quite possible that I'm wrong--which is why I only left a comment here)
that most or all of that stuff is handled (from Wireshark's point of view) by
GTK.
