Is this the DecodeAs dialogue? If so, I was wondering if it would be possible
to generalise this, but it seems to be implemented as a very "flat" and
hand-coded points at which you can specify decodes.

I must admit I was wondering if there was a more general approach - e.g. to
have a table of defaults for _any_ protocol to use in place of Data, but the
trouble I see is that some protocols have many uses of the Data dissector, not
just for a single carried protocol. Also most protocols have info in every
packet about the correct sub-dissector - it is probably easier to add a default
dissector as proposed here to the those which have this issue only on an
as-needs basis.
