I have a list of protocols supported by Ethereal
(http://ethereal.netmirror.org/docs/dfref/).  However I also would like
the corresponding protocol versions.  For example for the CAMEL
protocol, I would like to see the 3GPP TS document references (eg. TS
22.078,...) and their corresponding version numbers (eg. 7.6.0).  Is
there a way of finding out against which version of the standard the
protocol is supported?

Not really, other than checking the source code or asking the developer of the dissector for that protocol.

This is unlikely ever to change for Ethereal, as all of the core Ethereal developers have moved to Wireshark (as per the above note, which was automatically added to your message). You might want to ask in the Wireshark-users mailing list about this (again, as per the above note).
