You don’t need a filter to do this; just check the “Limit each packet to XX bytes” box in the Capture Options window. You can change the number of bytes to fit the size of your headers.

Is there a way to remove the TCP data field from a capture?

 

The IP and TCP header info is needed, but I need to filter out the user data.
