Considering the packets per second of today's applications, how could this be done in any meaningful manner?  Ethereal has TCP FLow diagram (though somewhat broken) that shows the typical tcp bounce diagram.  Packetyzer has a better tcp bounce diagram as well.

Most of what you're asking for exists in Opnet's IT-Guru software, but of course, that's extremely pricey.  I don't know if "ns" the open source network simulation software can do what you want.
