I think a lot of people have used Gigabit network cards--they're quite common these days.

The amount of packet drops really is a question of how much traffic is coming in vs. the speed and processing power of the capturing machine--so the answer really depends on your situation.

I don't think any of the statistics are relative to the network speed (indeed I doubt Ethereal even really knows or cares what the speed is), so there shouldn't be any change going to Gigabit (except, of course, that the total bytes per second and other measurements can now go higher ;-)).
