Filter out the conversation for which you want to calculate throughput (bytes/sec). For a quick average throughput select Statistics -> Summary then look at the average bytes/sec in the "Displayed" column.
For a more precise reading, it's a little more complicated. Under Edit -> Preferences select Columns and add the "Cumulative Bytes" column if it is not already being displayed (you will have to save and restart Ethereal if you make changes). Reopen the trace file (if necessary) and filter out the conversation. Right-click on a packet in the voice stream and select Time Reference -> Set Time Reference. Setting a time reference will "zero out" the time column and the cumulative bytes column at that packet. Scroll down until the time column reads 1 second beyond the reference packet then look at the cumulative bytes column. That is your throughput (bytes/sec) for that particular moment in time. You can repeat this process at other points in the trace if necessary.
