Hello,
you can install the Ethereal in one of the PC's where you are running the softphone applications. Voice is RTP over UDP, so capture all the UDP traffic running between both IP addresses where the softphones are. Provided that the voice profile is G.711 A-law, stop the capture, force (if needed) its decoding as RTP (Ethereal sees the RTP usually as UDP if it does not have session information telling which UDP ports are used for RTP) and extract the audio to format AU. That also works if mu-law. For other codecs, you will need to decode (G.729 or G.723), look for info in the wiki.
