Larry,
There are lots of stats available from tethereal, so it is hard to give
a specific answer. The most basic stats are those from the "-z
io,stats," option. The simple command " ./tethereal -R null -z
io,stat,1" will give results like

Interval: 1.000 secs
Column #0:

Time |frames| bytes

Depending on your skill, you could produce a script to munge this output
and create the approriate graph input file.
Stats available with the -z option include
-z argument must be one of :

done a whole lot more on this since unfortunately.
