Hold down the "Ctrl" key and type "C". (I.e., just interrupt the capture with control-C; Tethereal, like tcpdump/WinDump, has no user interface, and reads no commands from the command line, it just runs until you interrupt it with control-C or, on UN*X, whatever your interrupt character happens to be even if it's not control-C.)
