You might want to look into "os fingerprinting". There are a lot of good resources out there.
 
Also, many applications give away information in their "dialog" (e.g. HTTP headers, etc.) that can be very easy to notice.

I'm doing a lab in my class using Ethereal. We are to find out what operating system is being used by the client. Where would we find this information in captured packets.
