I think the most import thing is RAM. As long as the OS doesn't need to
swap memory to disk, Ethereal should work fine. You should also use a
good network interface card (see http://www.fefe.de/linuxeth/ for
details). Some cheaper NICs will put additional stress to the CPU of
your computer. 

I'm using Ehtereal on a 800Mhz PIII laptop with 512MB RAM which works 
for me. Depending on the size of capture files you should consider more
RAM. And by the way: RAM is cheap.
