Ethereal normally uses the information in H.245-signalling, SDP-signalling, RTSP-signalling and similar to set up a "conversation" for a certain ip-address and port when possible.

So you normally need to capture the H.323/H.225/H.24, SIP/SDP, ... signalling in order to have the packets 
decoded as RTP automatically.

You can also use the "Decode As.." functionality as described in the FAQ, and it is now also possible
to use a heurstic RTP dissector in the latest version of Ethereal.
Edit/Preferences.../Protocols/RTP/
(will only work for some payload types)
