On XP you can too if you start two instances of the ETHEREAL each for a different NIC.
This might even be better for analysis by having tow different capture files for each NIC instead of trying to understand which packet comes from which NIC.

Not under XP, but if you run ethereal under Linux it can, then you
just capture from the "all" interface and ethereal will capture from
both (all) interfaces.
