We have a need to look at HTTP traffic from a large number of virtual web servers listening on non-standard ports. 

Is there a way to force ethereal to apply a "decode as" to a range of ports or to all traffic in a capture?

Selecting each port with the Analyze-->Decode as drop down would not be practical.
