No, you can't save the raw data in text format.
You can save the dissection of the capture - either the packet summary lines or the packet detail information - in a text file; use "File->Print" and then print to a file, in text format. You can also specify that the hex data is to be printed as text, along with the detail information (but not along with the summary information).
