There were some bugs in the handling of MST messages in 0.10.0 and older versions; fixes have been checked in and will be in the next release.

The only protocols that show up there are protocols that have their own dissectors. The MSTP stuff is handled by the STP dissector - there's no separate dissector for it - so it doesn't show up as a separate protocol. (That list is generated automatically.)
