One way to do it is to build Ethereal from the CVS source, or wait for
the next release - in the current CVS version, Statistics > RTP Streams
> Analyse... pops up a dialog box that lets you save the payload of a
selected stream *or* save the analysis as CSV data.

I don't remember whether that's new or if it was in 0.9.15.
