It would be somewhat difficult to view packets without doing the capture step; if you don't capture packets, you can't view them. :-)

You *can*, when capturing, select the "Update list of packets in real time" option, in which case the display in Ethereal will show you the packets as they arrive; that means you don't do the "open file" step, although even if you don't do that type of capture the "open file" step is still done for you when you stop the capture.
