Yes. Under load, different techniques are required. Are you saying
you've already solved all of the performance problems that would be
obvious from a linear scaling of single-request data?

If so, you're doing better then 90% of J2EE projects. What remains are
generally resource contention issues, which are better diagnosed with
tools other than Ethereal.

Sure. It's pretty simple:

     1. Have a very clear understanding of is supposed to be happening
        on the network.
     2. Capture packets with Ethereal.
     3. Note the differences between what is supposed to happen and what
        did. 
     4. Eliminate the harmless differences.

What remain are your problems.
