Take a look at the vomit tool for Linux systems at http://vomit.xtdnet.nl/.  You can use Ethereal to capture the data stream, then pass the capture file to vomit to create a .wav output.

How can I passively capture a Voice over IP steam and transform it to a
.wav media file?  Any suggestions?
