Pasi,

you can get an open source SCTP implementation from http://www.sctp.de
Demo applications are included. So you can easily generate traffic and
sniff it with ethereal.

You can get a open source SUA implementation from http://www.sctp.be
(be, not de). This would allow you to see SUA traffic.

I have only testfiles to test the ethereal dissectors which are useless
if you want to understand the protocols. I can not make real trace files
available.
