Pretty sure this is a problem at the winpcap level, beyond ethereal's control.
The only workaround I've found so far is to reinstall the NICs in a different 
order.  You will still only be able to select the first card in the order.

Deleting one from the network configuration panel would also work, with
obvious consequences....
