I just thought I'd let everyone know that I tried the 
Loopback Adapter solution today and that doesn't seem 
to work.  Once I installed that adapter, I verified 
that I could access the webserver running locally by
using both the IP of my network card and the IP of
the loopback adapter.  However, when I selected the
loopback adapter as the "interface", Ethereal was 
still unable to sniff the local HTTP conversation.

Ugh.  :-(
