I suggest you first tell us what operating system you're using. :-)

Ethereal shows only interfaces that it can open for capturing; the
process of getting the list of interfaces on the machine is somewhat
platform-dependent, and the details of opening an interface, and the
rules governing whether a process can open an interface, are *quite*
platform-dependent, although the platform dependencies for the latter
are handled by the libpcap/WinPcap library.

Therefore, to determine the reasons why Ethereal might not have been
able to open an interface, we need to know what platform you're running
on.

Also let us know what interfaces your machine has.
