Aha - I figured it out.
I had version 2.0.2 drivers in my \Program Files\Ethereal directory itself.
I had installed these a while back while thrashing around trying to solve
the problem.
Now that I've removed Packet.dll and friends from *this* directory
Ethereal is working fine.
