In your home directory, there should be a ".ethereal" directory, created by Ethereal the first time you ran it (if you're a Windows directory, Ethereal finds your home directory by combining the environment variables HOMEDRIVE and HOMEPATH).  Create a file in that ".ethereal" directory called "ethers" with lines of the following format:

12:34:56:78:9A:BC       somedevice

You can also add comment lines starting with "#".

If you want, you can also put stuff like this in a file called /etc/ethers if you want all users of your machine to have those values (I suppose some operating system out there uses a file called /etc/ethers?).
