Because nobody's written code to save that information.

We could add additional preferences items, so they could be saved from
the "Edit->Protocols" dialog box, or add a "Save" button to, say, the
"Display Options" dialog box.

I'm not sure it should be automatically saved the instant you change it,
as somebody might usually want "seconds since beginning of capture" or
"seconds since previous frame" format, but might want to change to "date
and time of day" format temporarily.

(This is a tricky problem with configurable options - sometimes you want
to offer both "change this temporarily but, if I restart the program in
question (or, for OS properties such as IP addresses, reboot the
computer), use the old value" and "change this and make it stick".)

Another tricky problem is that adding new preferences items means that
if you save one preferences item, you save them all; you might want to
save some but not others.
