Probably because the GTK+ object that Ethereal uses to display the list
of packets allocates memory for the contents of every column in the
display; this takes a lot of memory if you have a lot of packets, and a
1GB capture fill will have a lot of packets.

This will probably be fixed eventually, but it's not easy to fix.
