I'm in the process of writing a book on networking, and will be releaseing some of it as Free documentation. An introduction to ethereal is part of the free stuff. I've got a draft available, and would love to get feedback on it. Please point your browser at tbr.nailed.org/ethereal.html for your reading pleasure.

A couple of caveats:
 1)  this is a draft - there are typos, errors, and goofs
 2)  for some reason the screenshots which looked great on my
    laptop look horrid from the web (they will be redone)
 3)  the section on building ethereal hasn't been written yet ...
