I really like the idea. I would suggest to use 'SS7' instead of telephony, but I do not know much about the GUI stuff in Ethereal. Maybe someone else
can help.

Do not forget the MTP2 settings.

I don't think that you can determine auto-magically the MTP3 or TCAP
flavor.
Worst, you cannot even say that if MTP3 flavor is ANSI, TCAP flavor is
also ANSI! There are some cases where this is mixed.

It would be much easier for Ethereal/Telephony users to have those
settings in a common "Preferences/Protocol" pane (telephony?), where you
could have:
MTP3 flavor: ITU/ANSI/Chinese ITU
ISUP flavor: ITU/ANSI
TCAP flavor: ITU/ANSI
...

Is this possible?

In addition, protocol dissectors could display an error like "can't
decode - check MTP3/ISUP/TCAP flavor settings" when they can't decode
with the current settings.
